One Pot Albondiga Soup

This soup is so delicious and easy to make. I had been wanting to make it for a while, but was iffy about it because my son doesn't like the texture of potatoes for some reason! I still decided to give it a try because I had been craving a beefy soup! My son came home from school I serve him the soup, and the first thing he says, "ewww potatoes!". After asking and asking and asking, he finally decided to give it a try! "Mmmmh mommy it's so delicious!". Was what he said as he took another spoon full! Made me so happy! Another successful, easy and delicious one pot meal!


HOW TO MAKE ALBONDIGA SOUP


You will start by heating up your pan at medium heat and greasing it so it can be ready for the meat balls. Prepare the pound of ground beef adding whisked egg and all of the condiments mixing it all together and start shaping the meatballs. I like using two Tbsp of meat, it makes the perfect size meatball! Put meatballs to cook at medium heat and covered. Turn meatballs every 5 minutes, cook for 10-15 minutes total. You will then remove excess grease with a spoon, add water. potatoes, carrots, tomato sauce, lemon, knorr de res, all of condiments and cilantro. Mix mix mix, and let it cook covered and low medium heat for 25-30 minutes. Remove from heat, serve and enjoy!


INGREDIENTS


For the ground beef

* 1 Pound Ground beef

* 2 Tbsp olive oil

* 1 Egg whisked

* Pinch of salt

* 1/2 Tsp garlic powder

* 1/2 Tsp pepper

* 1/2 Tsp onion powder

* 1/4 Tsp salt

* Pinch of paprika


For the soup

* 5 Cups of water

* 4 Golden potatoes peeled and cut in small pieces.

* 1 Cup crinkled frozen carrots

* 1/2 Tsp garlic powder

* 1/2 Tsp pepper

* 1/2 Tsp onion powder

* 1/4 Tsp oregano

* 1/4 Tsp cumin

* 4 Oz Tomato sauce

* 4 Tbsp Knorr de res

* 1/2 Lemon

* 1/3 Cup Chopped cilantro

* 1/4 Tsp salt


INSTRUCTIONS

1. Preheat pot at medium heat and add 2 Tbsp of olive oil.

2. Whisk egg and add a pinch of salt.

3. Prepare your beef by adding all of condiments. Garlic, pepper, onion, salt and paprika. Add whisked egg and mix all together.

4. Start shaping meatballs with two tbsp of meat, once all ready place them on your pot. Letting them cook for 10-15 minutes turning every 5 minutes.

5. Remove excess grease from pot using a small spoon.

6. Now add 5 cups of water, cut and peeled potatoes, frozen carrots, tomato sauce and all condiments. Garlic powder, pepper, onion powder, oregano, cumin, and salt. Now add tomato sauce, Knorr de res, half squeezed lemon, and chopped cilantro.

7. Mix mix mix and let it cook and low medium heat for 25-30 minutes. Serve and enjoy!
