Almond Flour Pretzel Dogs

My family loves going to the mall just for Auntie Anne's pretzel dogs! We love getting there, going to the Disney store, picking up some Auntie Anne's and just walk around and relax! But oh the guilt after eating all those delicious carbs! And with a baby its not very fun heading to the mall anymore, so I decided to look for a delicious low carb, guilt free and half the cost recipe that everyone would love! Pressing down their little faces on the oven glass, asking every 2 minutes if they were almost ready! I decided to top ours with mozzarella cheese and pepperoni just like Auntie Anne's. My husband and I of course added jalapeños! They came out delicious! The dough is extremely soft, you won't just eat one!


HOW TO MAKE ALMOND FLOUR PRETZEL DOGS


You will whisk together your almond flour and baking powder in a large bowl until well combined. In a microwave safe bowl you will melt mozzarella and cream cheese. Once fully melted you will add it to the almond flour mixture along with whisked eggs and start to mix everything together with your hands. kneading it all together making sure its all mixing together very well. This should be done while the cheese is still hot so that it can incorporate very good with the almond flour. The dough will be very sticky at first, but thats normal. Continue kneading until you see no more cheese and the dough is no longer sticky, and all one same color. Now place your dough on the counter and shape a square with your hands. the square should be about the size of both of your hands put together. Cut your dough in 6 equal parts. Now you are ready to roll your dough on to your hot dog. Add desired ingredients and put in the oven! It sounds like a lot of steps but I promise it is very very easy and so so delicious! Enjoy!


INGREDIENTS

* 1 3/4 Cups of Almond Flour

* 1 Tsp Baking powder

* 2 1/2 Cups Shredded Mozzarella cheese

* 2 Tbsp Cream cheese

* 2 Large eggs

* 6 Hot Dogs ( I use Ball Park Beef Franks)

* More shredded mozzarella cheese to garnish (optional)

* Pepperoni (optional)

* Jalapeños (optional)


INSTRUCTIONS

1. Preheat oven to 400 and line baking sheet with parchment paper.

2. Whisk almond flour and baking powder in a large bowl. Baking powder will get lumpy, so just press lumps down with a fork and mix again.

3. Whisk 2 large eggs in a small bowl

4. In a microwave safe bowl add mozzarella cheese and cream cheese. Microwave for 1 minute and mix. Microwave for an extra minute and mix.

5. Add melted cheese and whisked eggs to the almond flour mix

6. With your hands start to mix everything together. It will start turning into a sticky dough. Start kneading the dough until no longer sticky and all the cheese is fully incorporated. The dough should be all one same color and smooth when ready.

7. Remove dough from Bowl and place on your counter top. Shape your dough into a square pressing down with your hands and shaping the sides. Your square should be about the size of both your your hands put together.

8. Cut dough into 6 equal parts. Grab a piece and roll in in your hands making in the length of your hot dog. ( I used regular sized dogs, not bun size)

9. Place dough on your counter and press dough down with your hands making an oval shape big enough to wrap the hot dog. Now place the hot dog in the middle and wrap the dough around it. Make sure the dough is completely closed off. ( Repeat for the rest)

10. Place them on baking sheet and garnish with desired ingredients!

11. Place in the oven and bake for 14 minutes. Enjoy!


Note: These taste delicious dipped in warm cheese!!
